Quinoa Vegetable Soup


The "Gold of the Incas"
Just another protein power packed complex carb I'm sharing with you!
What is Quinoa? A fluffy, slightly crunchy nutty seed that tastes grain as it compliments most lean meats and vegetables.
Why Quinoa?
•First and foremost it's a complete protein ....say what?.....yep this just means that it has all 9 essential amino acids! Loaded with Lysine (amino acid) that helps your body to repair and grow tissue.
•This seed is loaded with Manganese which is known to relax blood vessels and can be great to used for people that suffer from Migraines and aid in cardiovascular health.
•Antioxidant rich
•FIBER rich (Great for Colon Health and well...overall health! and reduce your hunger)
Soup:
Low Sodium Chicken Stock
1 cup of uncooked Quinoa
Carrots
Celery
Onion
Fresh Garlic
Olive oil
Spinach
egg
I took 2tblsp of olive oil and sauteed 2 fresh garlic cloves, 1/4 red onion, 1 celery stalk, 1 carrot stick. Then I tossed in the dry Quinoa and let that get toasty.
Poured this into the low sodium stock which I had boiling with fresh spinach.
Boil for 10 min....Simmer till the Seed has 'sprouted' and during this time I tossed in one egg.
Serve Warm and with a side of lightly salted crackers. OMG... So Darn Good and So Healthy!
Looking forward to this soup as leftovers after my Runs this week!
